Do you ever wonder if you’ve planted enough zucchini, tomatoes, or other favorite veggies in your garden? We ask ourselves this question every year.
For some things we have learned how much to plant just by trial and error. For others, we’re still learning.
Last year we thought it would be great to have a lot of green beans, so we planted what we thought would be enough. Little did we know that we had planted more than enough! We were up to our ears in green beans!
Well, this year we were able to scale it back on the beans but my husband and kids were in charge of getting garden supplies this year and decided zucchini would be a great addition.
I didn’t disagree, I love zucchini. The problem is that they planted quite a bit. See, I’m the only one that really likes it. They all eat it but it’s not their favorite.
Well, this year has turned out to be a fantastic year for zucchini in our garden. The stuff is growing like crazy!! Which means instead of being up to our ears in beans, we are up to our eyeballs in zucchini.
We could have worse problems for sure, but now I have to figure out what to do with all of it.
A Versatile Vegetable
Zucchini is really quite versatile. It can be used in a lot of recipes or as a substitution for noodles (which is one of my favorite ways to use it!).
In addition to using what we can right now, (and probably giving some away. Anyone need zucchini? 😀 ) I thought I would make a few loaves of zucchini bread.
Making bread is one of the few ways that my family really loves zucchini. And it freezes really well!
But if you take a look at a lot of the recipes out there you’ll see that they have a lot of sugar, flours that contain gluten, and other ingredients that we try to stay away from.
That’s not a problem though, I just decided to make a healthier version that will fit our dietary needs.
A Healthier Zucchini Bread
What You Will Need:
- 1 1/2 cups of shredded zucchini
- 6 eggs
- 1/4 cups of melted butter
- 3/4 cup of coconut flour
- 1/4 cup of raw honey
- 2 Tbsp. vanilla
- 3/4 tsp. baking soda
- 1 1/2 Tbsp. cinnamon (more or less as desired)
Optional:
- 1 cup of chocolate chips ( I like these, they are allergy-friendly)
- 1 cup chopped walnuts
- 1/4 cup coconut oil in place of butter if you need to make it dairy-free
What To Do
- Preheat oven to 350 degrees
- Line bread pan with parchment paper
- Combine all wet ingredients and stir until well mixed
- Add dry ingredients and mix well
- Stir in zucchini and make sure to mix well again
- Pour into pan and bake for about 50 minutes
- Let cool for 5-10 minutes before serving
- Enjoy!!
