Easy & Healthy Shepherd’s Pie

This delicious recipe is pure comfort food and sure to be a new family favorite!

The best part is that this recipe is versatile, with just a few easy tweaks it can be adjusted for different tastes or eating plans, including Paleo and Whole30. (With a few additional changes it could be AIP compliant too).

What You Need:

  • 1 lb ground beef
  • 1 tablespoon olive or avocado oil
  • 3/4 cup of chopped onion (can be less or more depending on your preference)
  • 1/2 cup chopped celery
  • 1/2-3/4 cup of chopped carrots
  • 1 teaspoon minced garlic
  • 2 tablespoons tomato paste
  • 2 tablespoons coconut aminos
  • 1 1/2 cup bone broth
  • 3 cups mashed cauliflower

What To Do:

  • Preheat the oven to 375 degrees
  • Heat the oil in a skillet
  • Add veggies (except cauliflower) cook and stir for about 5 minutes
  • Add garlic and ground beef to the skillet. Cook until browned
  • Stir in tomato paste, coconut aminos, and broth.
  • Bring to a simmer, reduce heat and simmer for about 10 minutes
  • Pour meat mixture into a casserole dish and spread mashed cauliflower over the top
  • Bake for about 20 minutes  
  • For the last 5 minutes of baking time, spread butter (or ghee) on top and broil

Easy & Healthy Shepherds Pie Recipe Variations

As it is, this recipe is great if you’re following a paleo or Whole 30 diet. But here are a few variations just in case you want (or need) to change it up a little.

*Use any ground meat you choose. Lamb, venison, turkey, bison, or even chicken would work just fine.

*You could add green beans if you wanted to increase the number of veggies.

*Technically, it is acceptable to have potatoes on the Whole 30 diet, so if you’re following that you could substitute potatoes for the cauliflower topping. But if you’re following a strict paleo or AIP diet, potatoes aren’t allowed.

*Another really tasty substitution you could consider (which is paleo, Whole30, and AIP friendly) is to use sweet potatoes for the topping!

*Speaking of the AIP diet, you can make this AIP friendly by using a sweet potato topping (although the cauliflower works too), and skipping the tomato paste. Instead of tomato paste, you can use a no tomato ketchup like this one.
