If you have looked at any of the other recipes here you might have noticed that I really like to take recipes and tweak them or just throw ingredients together that I think might work and see what happens!

That’s exactly what happened with my Apple Spice Oatmeal Bars. An experiment turned into a new delicious, healthy snack!

Another favorite in our house is baked salmon and spaghetti squash. It is so good making double is a must!

The ingredients are few but the taste is amazing!! If you like goat cheese, onions, and salmon, this recipe is for you!

Here is what you’ll need:

Salmon fillets

1 medium spaghetti squash

Herb and garlic goat cheese

1 small to medium onion

2 tsp. of butter

That’s it! With these few ingredients a quick, healthy, & delicious meal really is possible 😉

Here’s how to make it:

First, heat the oven to 400 degrees. Then cut your squash in half, scoop out seeds, drizzle a little oil on the squash, and place face down on a baking sheet. Bake for about 45 minutes or until the squash is tender.

When the squash is done cooking it’s time to put the salmon in the oven. Put the salmon skin side down on the pan or baking sheet, sprinkle with salt and pepper to taste and pop into the oven for about 15 minutes.

After you put the salmon in the oven, slice or chop your onion. Add the butter to your pan and melt. Place onion in the pan and cook until they get to be a nice brown color.

Mix in your spaghetti squash along with the herb and garlic goat cheese. Heat and stir until the goat cheese is covering the squash. (I personally like to cut up the spaghetti squash so it’s easier to eat but do what feels right to you 😉 )

Take the salmon out the oven, place on the spaghetti squash, and there you have it, a healthy and delicious dinner! If you’re feeling really into veggies you could add a nice side salad, that way you’ll get quite a few servings in and a variety of color!
