When you have a diet with restrictions, for any reason, it can sometimes be a little more difficult to find or modify recipes.

Have no fear! If you are following a grain-free, gluten-free, or even dairy-free diet and in need of a gluten free pumpkin dessert, this recipe is just for you!

As is, the recipe contains dairy, but you could use coconut oil instead of butter and the recipe will work just fine. For the cream cheese frosting, you could use a dairy-free substitute like the ones from Daiya or Kite Hill.

What You Need:


Gluten free pumpkin dessert bar ingredients

  • 1/2 cup butter (or coconut oil) melted
  • 1/4 cup of raw honey
  • 1/2 cup of pumpkin puree
  • 5 eggs
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 Tbsp. pumpkin spice ( or you can use 1/2 cinnamon and 1/2 nutmeg)
  • 1/2 tsp. baking powder
  • 1/2 cup coconut flour

Frosting

  • 6 oz cream cheese (or substitute), softened
  • 2 Tbsp. butter (or substitute), softened
  • 1/2 tsp. vanilla
  • 1/4 cup raw honey

Gluten Free Pumpkin Dessert Bar Instructions:


  1. Preheat oven to 400 degrees
  2. Mix eggs, butter, honey, and vanilla together
  3. Add pumpkin and mix well
  4. Add baking powder, pumpkin spice, and salt. Mix thoroughly.
  5. Mix in coconut flour, stirring well. Make sure there are no clumps of flour.
  6. Pour into a cake pan lined with parchment paper
  7. Bake for 20-30 minutes or until done
  8. While baking, mix all frosting ingredients. A hand blender works well but it can be done with a fork as long as the butter and cream cheese are soft.
  9. After the bars are done baking, take them out and let cool
  10. Frost and cut into bars. You can also add any topping of choice. One of our favorites is allergy-friendly chocolate chips!
