Do you ever feel like throwing in the towel when it comes to cooking? If so, don’t feel bad, I do too sometimes. That’s one of the reasons I love this gluten-free mini quiche recipe. It’s quick, easy, and kid approved!

I’ll be honest, I don’t always love to cook. There are days when I feel like I cook, clean up, and it’s time to start the next meal. Ok, that might be a slight exaggeration. But with two growing and active kids, I am in the kitchen a lot!

What’s Busy Mom To Do?

I have found a solution that seems to help me spend less time in the kitchen (as long as I actually do it)- batch cooking! I take a few hours one day and make enough food for the entire week. This way I am able to be out of the kitchen more and there is still healthy food available for ravenously hungry kids 🙂

That brings me to the mini quiche recipe. I would like to say that I am a gourmet cook and whipped this together with skill, precision, and ease-but I would be lying.

This recipe came to be because I was in desperate need of healthy and quick breakfast options. I also happened to be watching the movie Waitress. If you’re not familiar with the movie, it’s about a waitress who dreams up different kinds of delicious pies. I felt inspired.

These mini quiche are the product of that inspiration. I know I didn’t actually invent mini quiche but since I had never made them before, I like to pretend I did 😉

One last thing, one of my favorite things about this recipe is that it is so easy to throw different ingredients in and it tastes great. Got leftover potatoes? What about bacon? Maybe some veggies that need to be eaten? Throw any or all of them in and you will have a delicious masterpiece!

What You Need

Crust:

  • 2 cups of gluten-free flour
  • 1 teaspoon of salt
  • 1 cup of butter
  • 1/2 cup of ice water

Filling:

  • 6 eggs
  • 1/4 cup of milk or water
  • 6 sausage links (or any breakfast meat)
  • 1/2 cup shredded cheese

How To Make The Crust

First, preheat the oven to 350 degrees. Next, mix the flour and salt together in a bowl.

Then add small pieces of cold butter to the flour and salt mixture. Mix the butter in with your hands until the butter pieces are smaller than pea size.

Add ice cold water by the tablespoon while mixing with a fork. Mix until a ball begins to form.

Divide the dough into two balls and roll out (putting them between wax paper can really help here!)

After that take a round cookie cutter or drinking glass and cut circles out of the dough.

Press round dough into a greased muffin tin or silicone muffin cups.

How To Make The Filling

Cook the sausages or other meat if needed. Let cool a little and then cut into small pieces.

Mix the 6 eggs and 1/4 cup of milk or water together and beat until eggs are well mixed.

Next mix the eggs, meat, and 1/2 cup of cheese together. Stir well.

Final Steps To Quiche Making

Pour the eggs, meat, and cheese evenly into each muffin cup. Bake for about 20-25 minutes or until done.

Let sit for just a few minutes before serving.

A Few Last Tips

Feel free to experiment with your favorite ingredients. Each time we make them we add something different and they have always tasted great!

Oh! One last thing- this recipe should make about 12-14 muffins.

These mini quiche freeze really well so if you double the recipe you can have breakfast for another busy week without any extra effort.
