Optional Ingredients Or Toppings:
- Beat eggs in a medium bowl.
- Mash the banana and mix it into the egg mixture.
- Mix well until blended and only small lumps remain.
- Stir in cinnamon and vanilla.
- Cook over medium heat.
- When the edges begin to brown, flip and cook for another 30-60 seconds or until cooked through.
- Top with your favorite berries, syrup, butter, or whatever your tastes buds are asking for 🙂
