Let’s just jump right into making those yummy gluten-free lemon cookies!

Gluten-Free Lemon Cookie Ingredients
One of the reasons I love this cookie recipe is because if you do any baking, chances are you’ll have everything you need for these gluten-free lemon cookies in your cupboard or pantry already! Isn’t it great when you don’t have to run to the store to get a bunch of ingredients?!
Ok, here’s what you’ll need:
- 1 1/2 cups of all-purpose gluten-free flour
- 1/4-1/2 cup of raw honey (or sweetener of choice)
- 1/2 cup of butter (or dairy-free substitute of choice)
- 1 Tbsp. apple cider vinegar
- 1 tsp. of baking soda
- 1/2 tsp. of baking powder
- 1 Tbsp. fresh lemon juice
- Zest of 1 lemon
- 1/2 tsp. vanilla
Easy Instructions For Gluten-Free Lemon Cookies
First, preheat your oven to 325 degrees.
Next, you need to cream the butter (or substitute) and honey (or favorite sweetener) together. I found that a hand mixer works best, although an immersion blender works too.
After you cream together the butter and honey, it’s time to add the baking soda and vinegar (which is an egg substitute), lemon juice, and lemon zest.
Combine all of these ingredients and mix well.
In a separate bowl, combine the flour and the baking powder.
Be sure to mix well.
After all of the ingredients are mixed together, use a tablespoon (or cookie scoop if you’re feelin’ fancy!) and drop onto a cookie sheet lined with parchment paper or silicone baking mat (baking mats are seriously so super handy!)
Once you get all of your drops of cookie dough on the baking sheet, use the back of the spoon to flatten the dough just a little.
Pop your cookie dough in the oven and bake for about 10-15 minutes. Be sure to check at the 10-minute mark and go from there.
When the cookies are done, bring them out of the oven and let them cool before serving or transferring to a plate or storage container.
Easy Icing For Your Gluten-Free Lemon Cookies
These cookies are delicious just as they are, but if you really want a special treat you can make an icing or glaze!
This is in no way healthy, but sometimes you just have to throw caution to the wind and eat a cookie with icing 😉
Frosting (Glaze) Ingredients Needed
1 cup of powdered sugar
2 Tbsp. of fresh juice from your favorite fruit
(If you leave frozen fruit to defrost in the refrigerator overnight you can easily have a few tablespoons of juice in the bottom of the package for your cookie glaze).
*You can use the juice from a lemon which gives the cookies an extra lemon-y flavor. Blueberry is also a good option, but my family’s personal favorite is raspberry.
Lemon cookies with a raspberry glaze are amazing!
Just mix these two ingredients together (it will be somewhat runny) and drizzle over your gluten-free lemon cookies!
Or, if you’re like my daughter, skip the drizzle and spread the glaze over each cookie like it’s a Christmas cookie that needs frosting over the whole thing 😀
Helpful Tips For Making Gluten-Free Lemon Cookies
1.Use real, fresh lemon juice (and don’t skip the zest!), it really does make a difference in the flavor
2. Skip nut and bean-based flours, the finished product doesn’t taste as good as using an all-purpose gluten-free flour
3. Store cookies in a covered storage container. They are best when eaten within a few days, but also freeze well if you want to save them for longer.
