There’s nothing like enjoying a chocolate cupcake (if you’re a chocolate lover, that is!). And no matter how old you are, cupcakes are just fun?

The problem with store-bought cupcakes is that they usually have ingredients like gluten, refined sugar, colors, and other substances that I don’t want myself or my family to eat. And in fact, two of the four of us can’t eat a lot of those ingredients.

But luckily, making healthy homemade cupcakes is fairly easy. And my kids love to help because they get to lick the spoon after we’re done mixing!

If you have the need (or the want!) for chocolate cupcakes be sure to save this recipe. It is sooo good!!

My daughter made them for my birthday this year, and I have to admit, it was the best birthday treat I’ve had in a few years.

I hope you have as much fun making and eating these gluten-free chocolate cupcakes as we did 🙂

Baking Equipment Required

I have had a lot of emails asking about some of the baking equipment I use in my kitchen so, before we jump into the recipe, let’s go over the equipment that you might want or need.

It’s pretty basic stuff because I don’t like clutter and only tend to keep the absolute necessities. So, while I don’t think that you absolutely need any or all of these products, these are things in my kitchen that I use regularly and have found to be helpful.

And let’s face it, if it’s quicker and easier I’m more likely to do it?

Ok, on to the helpful equipment!

Hand Mixer

A hand mixer can be really helpful and save you a ton of work if you’re mixing up a thicker batter or making many batches of cupcakes, and while I do have one, I have to admit, if it’s just one batch of something I usually use a fork 😀 (That’s probably why I use an inexpensive one and don’t spring for the fancier option!)

Glass Mixing Bowls

Glass mixing bowls are one of the few things I actually have many of in my kitchen. We have collected them over the years and use them for everything from baking to science experiments. In fact, my kids used them just today to make a batch of bath bombs!

Measuring Tools

For measuring, a glass measuring cup is a must! And because I never know when my homeschooled kids are going to steal my measuring cup for some random experiment, I decided this 3 piece measuring cup set was a good buy.

As for measuring spoons, I’ve actually acquired a few sets, but the most often used is this handy set.

Muffin Pan & Liners

Non-stick cook and bakeware were one of the first things we got rid of when we decided to create a non-toxic home. And one of the things that were eventually replaced was the muffin pan.

We went with a stainless steel pan and silicone muffin liners but there are silicone muffin pans too, if you would rather have that (they do seem to be a little less expensive than stainless steel).

Silicone Spatulas & Utensils

The last important utensil for this baking project would be a spatula. I love this 9-piece set because it is colorful, BPA-free, and easy to clean 🙂

Now that we’ve gotten the necessary equipment out of the way, let’s get to that gluten-free chocolate cupcake recipe!!

Gluten-Free Chocolate Cupcakes

Here it is, the best gluten-free chocolate cupcake recipe!

I hope you enjoy it as much as we do!

*Helpful tip- make a double batch 🙂 *

Cupcake Ingredients

3/4 cup of all-purpose gluten-free flour

1/2 cup cacao powder

3/4 tsp. baking powder

1/3 tsp. baking soda

1/4 tsp. salt (this one or this one are great options)

1/2 cup of raw honey (or maple syrup would work too)

4 Tbsp. of oil (coconut, avocado, or olive oil would all work, depending on your preference)

2 eggs (to substitute you can use 1/4 cup of fruit puree (avocado, applesauce, pumpkin, banana) and 1/2 tsp. of baking powder in place of each egg)

1 tsp. vanilla extract

1/2 cup milk (milk of your choice or water can be used)

Frosting Ingredients

2 ripe avocados

1/2 cup cacao powder

2-3 tbsp raw honey or pure maple syrup

1/4 tsp vanilla extract

1/8 tsp salt

Baking Instructions

Preheat the oven to 350 degrees.

Combine dry ingredients then add in wet ingredients

Mix well

Fill muffin cups about 3/4 of the way full and bake for about 20 minutes (be sure to check on your muffins while baking, each oven bakes differently!)

Frosting Instructions

While the muffins are baking you can make the frosting!

Be sure to start with soft, ripe avocados

Combine all ingredients in a food processor or blender and blend until smooth

You can add a little oil for an even richer taste if you want (although, these muffins with frosting are pretty rich already!).

That’s all there is to it!

After the muffins are cooled you can frost and serve.

Enjoy!
