Do you have cucumbers and tomatoes taking over your kitchen?

 

We sure do!

 

Our garden is doing really well this year and although I am happy about that, I needed to find a few new recipes so we could use the veggies from our garden in new and different ways.

 

Because it’s summer, I have no urge to stand in the kitchen and cook. I really want to be outside gardening, enjoying a little beach time, or swimming.

 

After all, we only get a few months of beach weather here!

 

So after a little thought, (and some online searching) a new recipe idea began to form.

 

I noticed other cucumber tomato salad recipes but wanted something that was a little more hearty.

 

Something that could be a meal on its own was the goal and I think it was achieved!

 

 

Cucumber Tomato Salad (With Avocado, Bacon, & Ranch!)

If you’re ready to use some of your garden cucumbers or tomatoes this recipe is sure to be easy, healthy, and delicious!

 

And with the avocado and bacon, it would be a great side dish or a perfect lunch.

 

What You Need:

  • 2 cucumbers
  • 2 tomatoes
  • 1 large avocado or 2 small
  • 1 medium onion
  • 2-3 strips of bacon (or more if desired)
  • 2 Tbsp. of ranch dressing (more or less may be needed depending on individual taste)

What To Do:

  1. Preheat oven to 400 degrees
  2. Line baking sheet with sides with parchment paper
  3. Spread bacon on the baking sheet and cook for 20 minutes or until done. You can also skip this step and fry the bacon in a pan if you prefer.
  4. While bacon is cooking, cut and chop all veggies
  5. Put all veggies in a bowl and mix
  6. Add ranch dressing
  7. Refrigerate until bacon is done
  8. After bacon is done let it cool and then crumble over veggies
  9. Mix, eat, and enjoy!

I told you, easy peasy!

 

In less than 30 minutes you can have a perfect meal that is easy, healthy, and delicious!

Ingredients

  • 2 cucumbers
