As someone who has recently found that I need to increase my potassium levels, I’ve learned that there are a few good options. One of my new favorites is a banana, blueberry, coconut water smoothie!

Now, I’m not someone who enjoys spending hours in the kitchen and I really don’t like coconut water, but let me explain why this recipe is actually perfect.


Let’s start with coconut water.


I know a lot of smoothie recipes call for yogurt or milk but if you’re trying to raise your potassium levels (because many of us, especially those of us with adrenal fatigue or thyroid issues, may not get enough potassium in our daily diets!) then coconut water is a great option.

One more benefit of coconut water is that it has been used traditionally as a remedy for dehydration.

Even though coconut water has many benefits, I personally don’t like it so I found myself wondering what I could add to make it taste better. What I found was that if you add bananas and blueberries you really don’t taste the coconut water at all!

But enough about coconut water and how drinking it plain is not on my list of fun things to do. Let’s talk about how to make a delicious smoothie that is healthy, hydrating, and full of all good things!

Ok, so the key to any good smoothie is to start with the best ingredients. To me, that means organic fruit. I use both fresh and frozen but it is always organic.

Why is it so important for the fruit to be organic? Because organic fruit is grown without toxic pesticides, herbicides and fungicides, which is great because you don’t want any of that in your smoothie!

Even though bananas have a protective peel, non-organic (conventional) banana farming uses A LOT of toxic chemicals in the form of herbicides and pesticides which do not necessarily wash off of the fruit. Not to mention, using toxic chemicals is terrible for the farmers who grow them! I don’t want any of that in my food or body so paying an extra 20 cents or so a pound is an easy decision for me.

Since we’re on the topic of chemicals and pesticides, I don’t want to forget to mention that buying organic blueberries is also a good idea. These little berries, if conventionally grown, have been found to have over 50 pesticide residues when tested!

YIKES!!

That is why they are frequently included on the dirty dozen list.

Ok, one last consideration before getting to that delicious banana blueberry coconut water smoothie recipe.


Let’s talk really quickly about coconut water.

For the same reason that I choose organic bananas and blueberries, I also choose organic coconut water. I just think it’s really important to have the cleanest products possible for the best taste and health.

One more thing I will mention is, if possible, you may want to consider buying products that are certified fair trade.

What does that mean? Here is what Fair Trade Certified says (and they say it better than I could) :

  • 1 ripe banana
  • 1/2 cup of blueberries
  • 1 cup of coconut water
  • 1/2-3/4 cup of ice

Add all the ingredients to the blender, blend until smooth, and enjoy!

That’s the great thing about this recipe, it is simple and delicious, but you can always use it as a base and add other fruit or veggies to change the flavor or add different nutrients.
